What's not to love about a Swig?

Have you ever heard of a town named St. George, Utah? Unless you are a Mormon or a cast member of sister wives, I highly doubt that you have. What is so special about this town that sits among the mountains of Utah? Years ago, the swig was born. The swig is a buttery, thick, soft, sweet iced pink cookie that is utterly addicting. The bakery is located at 989 East Tabernacle Street in St. George, Utah and the customers line up for long periods of time to get a swig cookie.
So did I get one or a dozen delicious swig cookies the last time I was in Utah? Here's the funny thing, I never have been to Utah.......ever! Thanks to Pinterest though, these amazingly awesome cookies have made their way from Utah to my kitchen in Iowa.
The post on Pinterest first caught my attention with the beautiful pink frosting and the words that followed that said "The cookies that will change your life"!
I made them for the first time in January and could not stop eating them. They really are fabulous cookies. The thing that makes them so great is they are very easy to make and they are kept cold until ready to eat and then you ice them with the room temperature frosting and the combination works! I can bet that you will not eat just one!
Here you go: The knock off Swig cookie recipe
What you need:
  • 1 Cup butter, softened
  • 3/4 Cup Vegetable Oil
  • 1 1/4 Cup Granulated Sugar
  • 3/4 Cup Powdered Sugar
  • 2 T Water
  • 2 Eggs
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cream of Tarter
  • 1 tsp salt
  • 5 1/2 Cups Flour
1. Preheat oven to 350 degrees
2. In a stand mixer cream together: butter, vegetable oil, sugars, water and eggs
(don't worry if you don't have a kitchen aid, get out your trusty hand mixer and a large bowl, it will work just the same)
3. In a separate bowl combine the flour, baking soda, cream of tarter and salt. Slowly add the dry ingredients into the butter mixture. (If you are using a stand mixer, add the flour slowly, otherwise it will go everywhere, trust me!)
4. Mix until everything is combined
5. With a medium size cookie scoop, scoop the dough out and roll it into a ball. Put 1/4 c. sugar and a pinch of salt in a bowl. spray the bottom of a glass. Stick the bottom of the glass onto the dough balls and mash them out.
Bake them at 350 for 8 minutes
Cool on the counter and then transfer them to the fridge. Leave them in the fridge until you are ready to ice them. You can store them in the fridge for, well, I'm not sure, they have never lasted that long to have to wonder?!

Icing: My normal icing is from Chef Kevin and is traditional buttercream that I add food coloring too. I use pink sometimes but you can use any food coloring to make them go along with any theme. I used blue and green for super bowl, Purple for Mardi Gras, pink and teal for Easter, you get the idea. If you don't have the time or any desire to make icing, go to the grocery store and buy the cans of Dunkin Hines or Pillsbury Cream Cheese and it works just as well! Whatever icing route you go down, you will end up with the same result, a magic piece of heaven that will change your life!
